Baby Cakes: Better Than Chicken and Waffles

The Daddy’s food truck girls are back on The Food Boat with four more breakfast eats and drinks

The Daddy’s girls are back again, and this time they’re bringing even more to the table. Check them out on The Food Boat as they make something even better than chicken and waffles– their specialty “baby cakes” along with a signature coffee spritz, a potato bowl, and an overflowing breakfast burrito. 

Coffee Spritz

If you were looking for an excuse to eat ice cream for breakfast, this signature coffee float has you covered. Daddy’s barista, Christina, shows her skills by pairing espresso with lemon sorbet for a sweet and creamy treat.

The recipe calls for coffee, soda water, two scoops of lemon sorbet, a twist of lemon peel, and fresh mint. This citrusy duo makes for your go-to summer coffee spritz.

Making the Mains 

It’s a fried food type of day on The Food Boat. Moving into the main dishes, chef Mary tackles the fried chicken, an essential part of all 3 of the featured menu items. She cuts the chicken into small pieces, making sure to trim any extra fat. These pieces get bathed in a buttermilk and egg mixture to get them ready for breading. 

The battered chicken gets dropped into Mary’s ‘special seasoning mix’, and then it’s tossed into the fryer. After they’re cooked to a perfect golden brown and cool, the pieces are tossed straight into the syrup to get them ready for building the rest.

The Burrito 

The Daddy’s burrito is definitely made for those who come hungry. The massive breakfast burrito starts with a flour tortilla and cheesy scrambled eggs. Then there’s fried chicken, cheese, bacon, fried potatoes, and avocado. To finish it all off, Mary adds salt, pepper, and cilantro– a Daddy’s must-have. 

One look at this bursting breakfast favorite even has the chefs saying “she’s stuffed”. 

The Potato Bowl 

The base of the bowl starts with fried potatoes, finished with just a dash of salt and pepper. Then comes the shredded cheddar cheese, a fried egg, fried chicken, and cilantro. And, of course, some extra cheese and bacon on top. 

When it comes to bacon, the Daddy’s girls prove here that you can never really have enough.  

The Baby Cakes 

Chef Mary takes the classic chicken and waffles idea up a notch. The Daddy’s Baby Cakes resemble a breakfast taco, with two folded pancakes sandwiched around syrupy pieces of fried chicken. The handheld masterpiece is finished off with a long strip of bacon, perfect for anyone who loves a good salty-sweet combo.

Christina’s Coffee Spritz

Ingredients:

  • 3oz coffee, brewed
  • 1 oz soda water
  • 2 scoops lemon sorbet
  • 1 sprig mint 
  • Lemon peel

Instructions:

  • Fill a cup with ice, and squeeze a lemon peel over the ice for flavor.
  • Add 3 oz of brewed cold brew coffee, and top with 1 oz of soda water.
  • Add two scoops of lemon sorbet.
  • Finish with a sprig of mint and enjoy!
